Alex and I had a little adventure in the kitchen tonight, that was a big hit. As a vegetarian, I still get cravings for a beef taco, but alas I cannot have one. This little recipe was a wonderful alternative. It was almost vegan, but we opted for real cheese instead of Daiya, but we did use vegan sour cream. All together a wonderfully delicious meal. I think the guacamole made it.
